2390.75(a)(2)William Warren-Allied provides meals for Individuals who attend their Vocational Program. Food is stored and prepared in a cafeteria which is located in the same building near the Vocational Program. The temperature in the freezer was between 6 and 10 degrees above zero.If the facility provides meals for clients or a food service training facility program in the facility, the following conditions shall be met: Food shall be kept at the proper temperature. Cold food shall be kept below 45°F. Hot food shall be kept above 140°F. Frozen food shall be kept below 0°F.On the day of Licensing inspection and after notification by licensing inspector of the citation, Allied Services had the freezer coils cleaned and the temp setting lowered on the freezer. This resulted in the inspector verifying a 0 degree temperature reading at the end of the day. Unfortunately, further monitoring indicated the freezer temperature readings could not sustain o degrees or colder. As a result of the inconsistent temperature readings, a decision was made to obtain additonal freezers and these freezers located in the adjoining room to the kitchen. These freezers will now be storage units for frozen food and will be monitored in accordance with licensing regulations. Teh dietician has initiated new freezer logs of of 07/28/2014 and dietary personel have been in-serviced on these new procedures. The exisiting freezer that was cited will remain as a staging unit for cooking purposes. 07/28/2014 Implemented
